Ground Up New Construction
Located just southeast of the I-80 and Highway 287 intersection, 307 Meat Company is a custom-built 9,000 square foot meat processing and retail facility designed to deliver both functionality and transparency to its customers.
This ground-up project included full site development, grading, and utilities. The interior was tailored to the specialized needs of the operation, requiring extensive plumbing, electrical, and HVAC systems. One of the standout architectural features is the glass-walled Retail Production room, allowing customers to watch their meat being prepared to order—an immersive experience that connects customer and product in real time.
The structure itself deviates from traditional commercial builds. We constructed a custom wood post-frame building with wood trusses and joists, supported internally by a galvanized steel rail system designed to move carcasses between rooms efficiently. The facility includes six insulated processing rooms with precision-controlled cooler temperatures and a large walk-in freezer, all housed within a building that reaches 34 feet in height to accommodate the vertical requirements of the operation.
Additional unique elements include a smoke room specifically designed for meat smoking, holding pens adjacent to the building, and an inviting retail space complete with offices, a break room, and restrooms.
